This idea never occurred to me until I saw a pic on instagram the other day. Whole baked sweet potatoes….
So simple and so much better than the standard baked potato on so many levels!
Brushed with olive oil and himilayan salt and slow roasted in alfoil for 2 hours then one more hour out of foil, (ridiculously slow oven) they were finally ready! We topped the potatoes with cabbage, carrot, cucumber, sundried tomatoes, hummus, yoghurt and I had a craving for anchovies….weird…. so on they went! Basically anything that was in the fridge was fair game. And it was absolutely, amazingly delicious.
